Chipotle Agave Chicken Wings


Ingredients
Grilled Chipotle Agave Chicken Wings Ingredients:
- 2 pounds chicken wings
Chipotle Rub Ingredients:
- 2 tablespoons ground chipotle power
- 1 tablespoon cumin
- 1 teaspoon kosher salt
- Chipotle Agave Sauce Ingredients:
- 1 cup agave
- 3 chipotle chiles from chipotle chiles in adobo, seeded and minced
- 1 tablespoon sauce from chipotle chiles in adobo
- 2 tablespoons Dijon mustard
- 1 tablespoon chipotle powder
- 1/4 teaspoon kosher salt
- 3-4 Green Onions

- Charcoal Grill
Directions
Chipotle Rub Recipe:
1. Combine all the rub ingredients (chipotle powder, cumin, kosher salt) in a small bowl or seasoning shaker and mix well.
Chipotle Agave Sauce Recipe:
1. Mince chipotle chilis.
2. Combine all the sauce ingredients (agave, minced chipotle chilis and adobo sauce, Dijon mustard, chipotle powder, kosher salt) in a small bowl.
3Mix well.
4. Separate half the sauce into another small bowl (for serving).
5. Dice green onions and set aside.
Grilled Chipotle Agave Chicken Wings Recipe:
1. Light Gateway Drum Smoker or other charcoal grill with Royal Oak Tumbleweeds and Royal Oak Charcoal.
2. Set up ½ of grill to cook direct, and the other indirect.
3. Heat to 300 degrees.
4.Evenly coat the wings with the canola oil then generously sprinkle the chipotle rub over the wings.
5.Place the wings over the direct flame and grill the chicken wings to 185 internal temp, flipping every 10 mins.
6.Once the wings reach 185 internal temp, move wings to the indirect cooking side of grill. Sauce and cook for 2-3 minutes, then flip and repeat.
7.While saucing, watch the wings and be careful that the sauce does not burn.
8.Put wings in metal bowl, brush with sauce and toss to coat.
9.Scatter on green onions to serve.
