Heath Riles Christmas Meatball Sliders
Ingredients
- 2 lbs Ground Beef (or chuck, whichever you prefer)
- 3/4 cup of Cracker Crumbs (or breadcrumbs)
- 3/4 cup of Shredded Cheddar Cheese
- 3/4 cup of Cooked, Chopped Bacon
- 3/4 cup of Diced White Onion
- 1 Egg, lightly beaten
- Heath Riles BBQ Sweet BBQ Sauce (approximately 1.5 bottles divided)
- Heath Riles BBQ Sweet BBQ Rub (approximately 1/2 tbsp)
- Heath Riles BBQ Beef Rub (approximately 1 tbsp)
- Small Slider Buns
- Sliced Cheddar Cheese for Sandwiches

Directions
1. Light your Goldens’ Cast Iron Cooker or any other grill of your choice. We used our place setter and got the grill to approximately 300º.
2. Mix your beef, cracker crumbs, shredded cheddar cheese, chopped bacon, white onion, egg, Sweet BBQ Rub, Beef Rub and 3/4 cup of Sweet BBQ Sauce.
3. Once thoroughly mixed, make balls.
4. Place on grill for approximately 30 minutes, flipping halfway through.
5. Put meatballs in pan and add one full bottle of Sweet BBQ Sauce. Allow to simmer on the grill for 20 minutes.
6. Remove from the grill and assemble meatball sliders as desired.
