Roasted Peaches

Ingredients

  • 3-5 Fresh peaches, cored, cut into wedges, about ½ inch thick
  • 3-4 Tablespoons butter
  • 2 Tablespoons honey, or to taste
  • ¼ cup or to taste, Cherry habanero glaze, such as Heath Riles brand

Directions

1. Fire up your smoker with Royal Oak to 325 degrees.
2. Cover the inside (bottom and sides) of a 10-inch cast iron skillet with about one tablespoon of softened butter.
3. Beautifully fan the peaches into the skillet, then top the peaches with a few tablespoons of butter. Don’t worry about the placement, as the butter will spread as it melts.
4. Place the skillet onto the top rack of your smoker, close the lid, and cook for 20 minutes.
5. Mix the honey and cherry habanero glaze while the peaches cook.  After 20 minutes, brush the glaze mixture all over the peaches, then continue to cook until the peaches are tender, or they reach your desired doneness.

Chef’s Recommendations

1. Use roasted peaches as a topping for pork chops, chicken, or even ice cream, for a summertime treat.
2. If you get in a hurry, or the peaches start to darken, cover the skillet with aluminum foil during the last half of the cook.
