Smoked Meatloaf Sliders

Ingredients

  • 1 lb ground beef
  • 2/3C whole milk
  • 1/3 C sweet pickle relish
  • 3T Beef BBQ Rub (Triple 9 Bovine)
  • Slider buns
  • BBQ Sauce (Craig’s)
  • 1 lb ground pork
  • 1 egg
  • 3 cloves garlic – grated
  • 2T Hot Sauce (Killer Hogs)
  • Sweet and spicy pickles
  • 3 slices white bread
  • ½ yellow Onion – grated
  • 2T Worcestershire sauce
  • Pickled red onion

Directions

1. Cut white bread into cubes and place in a mixing bowl.

2. Pour over milk and allow to soak for 3-5 minutes.

3. Add ground meat and the other remaining ingredients except those needed to create the slider (buns, pickles, red onion, BBQ sauce) into the mixing bowl.

4. Mix by hand until everything has been evenly distributed.

5. Make a 1-2oz test piece and fry off in a skillet and check for flavor, adjust with salt, pepper, bbq rub, etc.

6. When happy with the mixture, split evenly into 4 mini loaf pans.

7. Smoke at 300 degrees for 30-45 minutes until center of meatloaf reaches 160 degrees (pellet smokers are ideal).

8. Allow meatloaf to cool completely and remove from loaf pans. Store in refrigerator overnight.

9. Slice meatloaf into slider-sized pieces and warm up on a griddle or in a skillet.

10. Toast slider buns using butter or beef tallow.

11. Assemble slider, Bottom bun, BBQ Sauce, Pickled Red Onion, Meatloaf slice, Sweet and spicy pickle, Top Bun.
