Leslie Scott’s Beef Pot Roast
Ingredients
- 3 lbs chuck roast
- 2 onions
- 3 cloves garlic
- 1 cup sherry
- 1 cup water
- 4 tbsp beef stock paste
- 1 jar banana pepper rings
- 9 red potatoes
- 1.5 cup carrots
- Thyme
- Rosemary

- Cast Iron Skillet
- Medium Metal Bowl
- Sharp Knief
- Metal Tongs
Directions
1. Light Royal Oak Charcoal.
2. Salt and pepper on both sides of the roast.
3. Sear both sides of the roast.
4. Sautee onions and garlic in cast iron pot.
5. Add herbs, sherry wine, and beef stock.
6. Add carrots and potatoes after 1 hour.
7. Simmer covered for 30 minutes, and then simmer uncovered for 30 minutes.
